Here, a roasted lamb is adorned with sweet cherry notes, pike-perch is garnished with zucchini blossoms and calamansi sauce, and roasted langoustine shares the plate with foie gras and delicate mirabelle spheres. Each bite is a landscape: a conversation between the Valais valleys and the Italian coasts.
The experience is not limited to the à la carte menu. Degustation menus of four, six, or eight courses offer a sensory journey that challenges alpine culinary expectations. Lobster, for example, is presented in two acts: first with accents of peanut and mango, then with a cognac bisque that comforts like a roaring winter fire.
